When I was younger, we would go to Garcia’s for our birthday dinner. Garcia’s was so good and on our birthday they used to give you fried ice cream for dessert. They may still give you fried ice cream for dessert I haven’t been there for probably 8 years.
Fried ice cream is so yummy when I found this recipe and it called for Corn Flakes, I thought that it was weird. Well sure enough, it tastes just like Garcia’s.
I use the store brand Corn Flakes, you can’t tell the difference.
Fried Ice Cream
half gallon vanilla ice cream, softened
½ c butter
1 c brown sugar
2 c finely crushed corn flakes
¼ t cinnamon
Caramel ice cream topping
In a medium sauce pan, melt butter over medium heat. Add brown sugar and bring to a boil. Boil for 2 minutes then remove from heat. Stir in the cornflakes and cinnamon until well combined.
Divide corn flake mixture in half and press evenly over the bottom of a 9×13 baking dish. Spoon softened ice cream evenly over corn flake mixture. Carefully smooth with a knife.
Sprinkle the remaining corn flake mixture evenly over the top. Place dessert in the freezer for at least 3 hours or until well set.
To serve: Drizzle dessert with caramel ice cream topping over the majority of the top of cake. Carefully spread as needed to cover. Drizzle with hot fudge. Cut into square pieces and serve with whip cream.
